Vegan Stuffed Peppers

Our Good weather is gone and the cold dreary rainy weather has arrived. Boo! Baring teeth smile along with the wonderful weather my headache is back!! I know it is weather and allergy related and it is so annoying.

I cannot believe tomorrow is the day I meet with my surgeon. We are still trying to figure out a way for Kevin to come with me. I really really hope we can figure out a way to juggle getting Robbie on the bus and Austin to work later in the day. I really do not want to have to drive up alone, especially with these headaches. Whatever happens I will go, meet with Dr. Toder, get my next step from her.

I will share what happens with you, quite possibly via a vlog instead, we shall see. I've been wanting to start vlogging and seems like a good as time as any, right? Definitely a lot less typing on my iPod!!! Thumbs up

How about a new recipe?

Vegan Stuffed Peppers102

Ingredients:

  • 6 bell peppers, large
  • 1c tomato sauce
  • 1-15oz can black beans, drained & rinsed
  • 1c corn
  • 1 small onion, diced
  • 2c cooked brown rice
  • 3/4c shredded carrots
  • 1c diced mushrooms
  • 1t cumin
  • 1/2t smoked paprika
  • 1t ground coriander
  • 1c nutritional yeast

1.Cut tops off each pepper reserving the tops. Remove the seeds and membranes from each pepper.

2.In a large bowl combine remaining ingredients plus the usable parts of the pepper tops diced. mix well.

3.Fill each Pepper with stuffing mixture.

4.Pour about 1/2c water into crock pot. Arrange peppers in crock pot.

5.Cook on high for 8 hours on low or 4 hours on high.
Serve with cornbread and coleslaw if desired. ( not in NI). 6 Servings… 1 Pepper each

This was a first try making stuffed peppers and I really liked them quite a lot. I will probably tweak the spices a bit more and will update when I do.

Thank you! These peppers look absolutely amazing. I am working on collecting plant based recipes, because I am transitioning into a primarily plant based diet. I will absolutely be trying these...probably very soon!
