A Great Shake!







Breakfast was protein packed eggs with peppers and mushroom and the typical coffee with added Sweetener…of this week it is Truvia…and skim milk.
Lunch rolled around and I was in a hurry needed to leave for youngest sons speech appointment so I threw some eggs to make egg salad and grabbed a banana. Not fancy but did the trick and fueled my body enough.
Before dinner I was feeling a  bit hungry and remembered I had seen I had 1 Key Lime Pie yogurt from Fiber One left in my freezer. Score for me! It was good and totally guilt free!
Dinner was planned…well I thought I had it planned. I decided early in the day I would keep it a meatless Monday and changed my intended meal plan to have leftovers of the Thai Tofu I made the night before…until I went to make re-heat dinner and discovered my oldest son had eaten it for…wait for it…BREAKFAST!!! When I asked when and why he responded he was hungry and knew that it was good for him! UGH I have created healthy monsters. How could I be upset and disagree with him, after all there WAS leftover pizza in there too!!
What is a Mom to do? Improvise! I had leftover Wheat berry & rice bake so I took that and placed on bottom of a 9x13 pan. Made up some meatless taco meat placed on top then layered corn and tomatoes then cheese. Final result…
…a pretty tasty dinner that was paired with some steamed veggies. Success!
   A bit later…just before Chuck began…LOVE that show…do you? My tummy was telling me to feel it…oh no getting hungry do not want to eat this late…what should I do? Well I looked over my journal for the day and I try to be sure I get in at least 3 servings of milk 7 servings of fruit and vegggies as well as 2 teaspoons of healthy oils. So seeing I was a little short on all 3 I thought…a shake! Yes a shake. SO I blended a package of dry milk with water added 3 cups of strawberries about 1/2 c frozen cranberries 4 packets of Truvia and 2 tablespoons of canola oil and whisked it all away to this--->

It was so good! who needs McDonald's or Wendy’s when you can make your own healthy and yummy shake right at home and feel good about not only drinking it yourself but serving it to your kids as well! We thoroughly enjoyed them totally guilt free!

  1. I love a good healthy shake! And you're right, fast food restaurants need a healthier option or we can just do it ourselves at home! ;0)
