Whole Wheat Streusel Coffee Cake

Adapted from back of Hodgson Mills insta bake box

Ingredients 

Cake: 

2 c Whole Wheat Insta-Bake Mix
2T sweetener(I use stevia)
2T butter
1 egg
2/3c skim milk

Streusel Topping: 

2/3c HM Insta-Bake 

2/3c brown Sugar 

 2t cinnamon 

1/4c firm butter

Directions

Preheat oven to 375. Grease a 9x1 1/2 in round cake pan
Combine first 2 cake ingredients and the cut in butter until crumbly.
Add remaining cake ingredients and beat for 20 strokes.

Spread in prepared pan.
Make topping:
Combine and mix all ingredients with a fork.
Sprinkle on top of cake batter.

bake 25-30 minutes or until toothpick comes out clean

  1. That looks amazing! I don't know if we have that Insta-Bake here. I'll have to look! So often when I make coffee cake it is dry - this sounds like it would be really moist and tasty.

  2. mmm thanks for the recipe...looks great. Thanks for sharing the insta bake...I gotta see if it is in the stores here. I have been craving pancakes and wouldnt feel bad if they were whole grain!
