Breakfast was yummy “cheesecake” yogurt topped with some grape nuts and a banana…what you do not see is my 1…yes 1 cup of coffee with skim milk in it. I already had it before breakfast.
Lunch was really good. Remember my creamy grits I had the morning before? No? Well you can see them here. I had leftovers that I put into oval Pyrex and put them in the fridge to use as bread…pizza crust…whatever I wanted that needed something like that. I baked it in the oven for a little bit while making my kids their whole grain bagel pizzas. When it had crisped up a bit I topped it with tomato sauce, about 6 turkey pepperoni slices some onion crisps and fat free mozzarella I mixed with a teaspoon of olive oil.
Let me just say it was sooo good! I also had some celery and fat free ranch dressing.![]()
We had dinner at the in-laws last night…a ham dinner! I love ham. Mom made a traditional green bean casserole…which I passed…mashed potatoes(had stick of butter in it)…I passed on those too…some crusty bread rolls(totally LOVE bread)…I passed on those too…a beautiful salad…which I had with some poppy seed dressing. It was good. I brought the remaining broccoli soup with me that I had made as another veggie side and had that as well.![]()
Dessert…oh dessert was a crustless pumpkin pie I made earlier in the day. It was so so good…
…so good I had a second piece!
No guilt with that second piece as there was only egg, evaporated skim milk, pumpkin, a few backs of stevia and spices…that is all! I love it. As a matter of fact I brought the last coveted piece home and am having it for breakfast…minus the whip topping. The whip topping was a new guiltless find for me too. Exercise I started the 30 day EA Sports Active Challenge. I am a tad sore this morning…i is a good feeling!
I downed 48oz of water as well, took my vitamin.
