Pumpkin & Chocolate...



I LOVE fresh pumpkin…I just know when I am in the kitchen making it…I am gonna be there a LONG time.

Here is it all getting ready to cook…just put in the oven.

Here we are all cooked and cooling waiting to puree and place in freezer bags.

Another GREAT think about making fresh pumpkin is….
PUMPKIN SEEDS!!!

I will be roasting these babies in just a little while.
While I was waiting for the pumpkins to finish I peeled and chopped all my apples from our apple picking trips to place in the freezer to wait to be used in pies…applesauce…and other recipes.

This truly is a time consuming chore as well…so I volunteered my daughter to help me out.


As soon as we finished with the apples the pumpkin was ready to be pureed. I ended up with the equivalent of 5 large cans of pumpkin.!! WOO HOO!

Now onto the cookies since my pumpkin is ready….

Nice little balls of chocolaty goodness…waiting to melt into nicely rounded cookies.

Don’t they look positively yummy!!???

Chocolate Choco chip

Ingredients

    • 1 DH Devil's Food Cake Mix 
    • 1c chocolate chips 
    • 1 sm can pumpkin

Directions

Mix all ingredients together and drop by teaspoonfuls onto un-greased cookie sheet. Bake at 350 for 15 minutes.

I was able to get 3 gallon freezer bags filled with sliced apples to put in the freezer too. A very productive day in the kitchen.

    Yum!! It all looks so, so good! Well...my mom makes an awesome pumpkin pie - although the fill comes from a can - the crust is homemade, though, and it's what makes the pie! Those cookies...oh gosh!

  2. Oh geesh. Nothing from scratch. My daughter and husband do - cookies, pies, even pizza - but me? I'm terrible!

    And I enjoyed the baking saga here. Wishing I was there to gobble it all up.

  5. Those cookies look great ... I usually cook from cans (even my pumpkin comes from a can), but sometimes I do things from scratch.

    I love the idea of having freezer bags full of pumpkin, though.

  6. well, prechild I was ALWAYS from scratch but lately notsomuch.
    mainly because it seems we rarely eat what we make (its all about the process with her...the mixing etc) and end up giving it away.
    which now that I think about it may make it worse I use boxed stuff!! :)

  8. You were on a mission Trish! I bet your house must have smelled sooooo yummy and those cookies look fabulous.

    I am also trying to make some changes in my life, for my boys and myself. I've started cooking again-no more take-out! I do feel more energized. The next step is exercising, just taking it slowly.

    Keep on keeping on cause you WILL succeed and you are inspiring me in the process!
