PB & J Muffins

Ingredients

    3/4 C skim milk 
    1 egg, slightly beaten 

Directions

Preheat oven to 400 degrees.
Spray a muffin tin with a non stick cooking spray.
Mix together the flour, oats, baking powder and salt.
In a separate bowl mix the milk, honey, applesauce and egg.
Fold in the peanut butter.
Add the milk mixture to the dry ingredients and mix until just moistened.
Fill each muffin cup 3/4 full of batter add 1t preserves on top of each.
Bake 23 minutes or until a toothpick inserted in the center comes out clean.
