Not Too Much


It was quite the uneventful day here in our home. I had a lot of computer and paperwork to contend with so not much else was accomplished.
Breakfast was a great combo…scrambled eggs, half an avocado and some creamy grits with Land O Lakes picante seasoning over top.  I stir fried the remaining rice from the other night with some eggs and heated the last of the fresh beets.  Lunch was good and my 5 year old LOVED it…asked for more! I need to remember he loves stir fried rice….the picky eater he has been lately, this is a good mental note to remember.
I baked some chicken thighs with this really good seasoning blend I bought at a local fair back in September. I do not think it is available in retail stores…but it should be…it is THAT good. I added a side of steamed veggies and a delicata squash I baked, then added a teaspoon of brown sugar, returned it tot the oven to allow it to melt in.  Oh it is soooo good!
   Nothing more on the menu.

I love fall veggies…the beets…different types of squash…especially PUMPKIN…so now I ask you…my faithful reader(notice I know there is only 1;) no ‘s there) What might YOUR favorite fall veggie be? How do you like to prepare it?

  1. Hmm, that's a tough one. We like squash. Just roasted some w/ olive oil, then sprinkled on brown sugar & pumpkin pie spice. It was sooooo good. My 11yo son was bummed when it was gone.

  2. anything with yams or sweet potatoes -just nuke it and spray with butter spray or eat plain. so hearty and earthy and delish!

  3. I'm big into acorn squash. Just cut in half, microwave in shallow water (cut side down) for 10 min, be careful - very hot, let cool a bit, mash with brown sugar. mmm...

  4. I like sweet potatoes. I never used to, but my tastes have changed. Pumpkin is another fall favorite, but I guess that is a fruit!

  5. I'm kind of a pumpkin nut myself. I'm going to tackle a spaghetti squash this week because I hear it's a great sub for pasta. I can't wait!
