Brought To You By the Letter “P”

  Have you ever had FRESH popcorn?

 It is really good and so worth the effort. Here “K” & “R” are getting all the kernels off the cob so we could make some fresh popcorn.

As “K” & “R” are de-kernaling, I am making a recipe renovation to a healthier version of a recipe I found on Betty Crocker. It is for none other than Pumpkin Pancakes!

Pumpkin Pancakes
   adapted from here.
Ingredients
    1/2 c canned pumpkin (not pumpkin pie mix) 
    1 1/4 c skim milk 
    2 eggs

Directions

1. Heat griddle or skillet over medium heat. Grease griddle with cooking spray. In medium bowl, stir all pancake ingredients until well blended. For each pancake, pour slightly less than 1/4 cup batter onto hot griddle.
2. Cook until edges are dry. Turn; cook other sides until golden brown. Serve with syrup.

While we were waiting for breakfast to be done Hubby had an “accident”. He scratched his hand and Paramedic “R” came to the rescue.


He assessed the situation, found the correct and necessary items and quickly went into action to help Hubby…aka Daddy…feel better quick.
All is ok and Daddy is all better…so that is the end of our day brought to you by…the Letter P!
