I was just plain not hungry for breakfast so only had 2 cups of coffee with skim. Lunch time rolled around though and I was starving. I am so glad I had leftovers from chili I made the fam Wednesday night so to the stove I went.
I had not 1 but 2 soup bowls…mmm good. I ate until satisfied.![]()
Now enter in these little devils that my children put the bag in front of me…so I had some…20
to be exact for a whopping 3 pts! Did I love them?! NO! So not worth the points…but now I know and will NOT have them again. :)
Dinner was a theme…PUMPKIN.
I made a creamy pumpkin sauce, pumpkin biscuits and steamed broccoli. All were very good.
Pasta with Creamy Pumpkin Sauce
Ingredients
- 2 Shallots, chopped
1T Butter
1/2c Chicken Broth
1 1/2c Pumpkin, canned
1c evaporated skim milk
1/2t Nutmeg
1/2t dry ground mustard
1t. Salt
16oz pkg whole wheat pasta of choice
Directions
In a large sauce pan melt the butter and add the shallots cooking them until tender.
Add broth, then simmer for about 5 minutes.
Put water on for pasta. Add pasta to boiling water and cook al dente.
Add pumpkin and milk. Bring heat up for about 5 minutes then back to simmer and add nutmeg, mustard and salt. Cook over low heat fro 25 minutes, stirring occasionally.
Toss pasta with sauce and enjoy.

What would a pumpkin themed dinner be without pumpkin pie for dessert! A crustless one that is soooo very good. A great end to a great meal.

Looking up over my meals yesterday, really did not eat a lot. Hmm need to pay more attention and not allow that 7 pound loss effect my judgment. I can do this….I AM doing this.

Pumpkin sauce! What a great idea! I am so into pumpkin in the fall too... I put it in my oatmeal and I make the crustless pie (nonfat) and have it for breakfast :) You can also stir 1/4 c pumpkin into your bowl of chili, it tastes great and adds nutrition!
