Hash Brown Casserole

Ingredients

  • 6 eggs
  • 1/2 cup skim milk
  • 24 oz bag frozen hash brown potatoes, thawed
  • 4 oz lean ham, diced
  • 1 small onion, chopped
  • 1/2 medium each, green and red pepper, chopped
  • 1/2t onion powder
  • 1 1/2 cups shredded Mexican cheese, divided

Directions

1. Pre-heat oven to 350. Spray a 13x9 baking dish with cooking spray.
2. Beat eggs & milk together.
3. Add remaining ingredients, reserving the 1/2 c cheese. Mix well.
4. Bake for 55 minutes or until eggs are set.
5. Sprinkle remaining cheese and return to oven to allow the cheese to melt. About 5 minutes.
6. Remove from oven and allow to set for about 5 minutes to firm up.
