MMM Loved my breakfast this morning. I sauteed some onions colorful peppers then added my eggs and topped with a little low fat Mexican cheese with a slice of avocado on the size. I also had my coffee, cannot get my day going without my coffee! :)
For a snack I had a Breyers Pure Fruit Pop. I had the mango and it was fairly tasty. It was a little on the warmer side so it hit the spot.
For lunch at the request of my youngest I made hot dogs and oven fries. Well I do not know about you but I need a little ketchup with mine and we do not use it that often, but when we do I make up a fresh batch. Yes I make my own ketchup. It tastes better, is quick and I KNOW what the ingredients are.
This is what you need to make your own homemade ketchup. Not much and the vinegar is a key ingredient. I used just plain apple cider vinegar but have used a red wine vinegar and also a balsamic vinegar to make it more "exotic" in the flavor area. You also have the option to make it thicker, which is how we like it, or thinner.
Here is the the final product all ready to use on our lunch. It took less than 5 minutes to whisk it up.
For lunch I added a side of cauliflower, not a very colorful lunch but it was OK. I am personally not a fan of hot dogs but will on occasion make them as they are one of my kiddos faves.
After lunch it was my Mommy/Daughter time. She had a chiropractor appointment and we had some shopping errands to do. Her appointment ran a bit later than anticipated so we decided
to treat ourselves to an afternoon snack of a muffin and coffee. She had a muffin and water.Dinner was really good. I made BBQ tofu. I found the recipe here yesterday and knew I just had to try it that night. Oh it was so very good. I balanced it out with sides of corn and a green bean mix.
After things settled down a bit I decided I wanted my night snack after all and added a beer to it. A Heineken light along side my air popped popcorn drizzled with canola oil and sea salt. For me this ended my night well.

All things in moderation but today I seemed to be more on the hungry side. I accounted for it all and mentally I am OK with my choices. Some could have been better, but overall I am happy with the progress I am making back to my healthy eating. baby steps. Need to take things one step, one small step, at a time.
A little update on my youngest. He is still getting better. He is sleeping through the night and is a bit more active earlier in the day but then crashes. So he is on the mend this bug just is a bad one and continues on for up to 2 weeks! We are almost at the 1 week mark and he is keeping fluid and food down so that is a good thing. the other good thing is no one else has gotten it, so far. It is still in a contagious stage until his stool is firm, so we will not know 100% if we all dodged it until 3 days past that time.
